Since the winter in Hida region is extremely cold, people cannot grow fresh vegetables. Therefore, locals like to eat pickles, the preserved vegetables, in winter. Due to the large temperature difference in Takayama, the turnips grown here are sweet, juicy and have plenty of umami. The salt-based red turnip that has been aged for a long time by lactic acid fermentation is characterized by the umami and slight acidity of fermentation. Only the skin of the freshly harvested red turnip is red and it is basically white inside, therefore Takayama people intentionally dye the color to red and finally it become the famous Red Turnip Pickles in Takayama, a traditional food of Hida region from the Edo period.
